If you’re looking for an easy chocolate peanut butter dessert that requires no oven time, I’ve got you covered. If you want it made with simple ingredients that you probably have in your pantry right now, I’ve got you covered!

Say hello to these decadent and delicious – yet healthy – no bake chocolate peanut butter bars. They’re made with only 5 simple ingredients including oats, natural peanut butter and honey. These bars are gluten-free so long as you use certified gluten-free oats. They can also be made vegan by swapping the honey for maple syrup or agave syrup.

They’re kind of like a peanut butter cup, but in bar form with chewy oats mixed in. If you’re a chocolate and peanut butter lover, you’re going to LOVE these!

No Bake Chocolate Peanut Butter Oatmeal Bars Ingredients

Natural Peanut Butter. You can’t have a peanut butter dessert without it! Feel free to use traditional peanut butter if you don’t have the natural variety.

Honey. To sweeten the peanut butter layer just a little bit!

Rolled Oats. These make the bottom layer nice and chewy. I used large flake rolled oats but quick cooking oats will do just fine.

Semi-Sweet Chocolate Chips. We will melt these to create the top layer for the bars.

Refined Coconut Oil. You just need 1 tbsp to mix in to the chocolate chips before melting. This helps them melt into a smooth, creamy consistency and adds a touch of richness.

Flaky Sea Salt. This is for sprinkling on top and is totally optional.

How to Make This Recipe:

Line a large loaf pan with parchment paper. In a mixing bowl, add 3/4 cup natural peanut butter, and 1/3 cup honey. Mix to combine. Add 1 1/2 cups rolled oats and mix again until well-combined.

Transfer the peanut butter oatmeal mixture to the lined loaf pan, spread and press down evenly with clean hands or a spatula.

Add 1 cup semi-sweet chocolate chips and 1 tbsp refined coconut oil to a microwave-safe bowl. Microwave in 30 second intervals, stirring in between, until chocolate is melted and smooth.

Pour chocolate mixture into loaf pan over the peanut butter layer. Spread evenly with a spatula. Sprinkle with flaky sea salt (optional) and place in the refrigerator to set for 2-3 hours, then cut into bars. Makes 12 bars.

Substitution Suggestions:

For peanut butter: If you have a peanut butter allergy or don’t keep peanut butter on hand, another nut butter would work well! I think that almond butter or cashew butter would be delicious.

For honey: If you don’t have honey or are looking to make this recipe vegan, you can use maple syrup or agave syrup instead.

For semi-sweet chocolate chips: Feel free to mix things up and use dark chocolate or milk chocolate chips in this recipe. Again, if you’re looking to make this recipe vegan, just make sure your chocolate chips are dairy-free!

For refined coconut oil: I like to use refined coconut oil because it doesn’t have such an overpowering coconut flavour. If you prefer to use virgin coconut oil it will work just as well, the chocolate may just have a slight coconut flavour.
