An easy recipe for gluten-free cookie dough that is made in just minutes! This edible chocolate chip cookie dough recipe is egg-free and also has a dairy-free and vegan option.
Gluten-Free Cookie Dough
This gluten-free cookie dough recipe is an egg-free and heat-treated flour recipe that makes it safe to eat. If you are a fan of eating cookie dough, this recipe is super yummy and safe to eat!
This edible cookie dough recipe tastes just as good as the regular cookie dough, and there are a few differences in the ingredients that make this dough safe to eat. Because this cookie dough heat-treats the gluten-free flour and does not contain eggs, there are not raw ingredients and it eliminates the risk that comes from eating traditional raw cookie dough.
So this edible chocolate chip cookie dough has all the same flavors of traditional cookie dough without any of the risks. That’s a win-win in my book!

How To Heat Treat Gluten-Free Flour
Heat-treating the gluten-free flour helps to kill any bacteria, making the cookie dough edible and safe to eat. There are two methods to heat treat flour.
For the microwave method: the gluten-free flour is microwaved for 1 minute or until it reaches 165°F.
For the oven method: the gluten-free flour is baked for 5-10 minutes at 350°F.
I use an instant-read thermometer to check the temperature of the flour and make sure that it reaches 165°F. I prefer the microwave method.
How To Make Edible Gluten-Free Cookie Dough
- Add the gluten-free flour to a small microwave-safe bowl and microwave the flour for 1 minute or until the temperature reaches 165°F. Stir the flour to distribute the heat.
- You can also bake the flour on a baking sheet for 5-10 minutes at 350°F. Please watch your oven as to not let the flour get brown. Allow the flour to cool.
- I prefer the microwave method. Do not skip the step to heat treat the gluten-free flour!
- In a medium-sized bowl, stir together the softened butter, granulated sugar, brown sugar, and pure vanilla extract until fully combined and smooth. (photo 1)
- Add the flour and salt and mix until fully combined and forms a dough. Stir in the chocolate chips with a spatula. (photo 2 & 3)
- Use a greased cookie scoop to scoop the dough into balls, and place on a parchment-lined cookie sheet. Place the dough balls into the freezer for 20 minutes. Enjoy! (photo 4)
- Store leftovers in an air-tight container in the refrigerator.
Can I Freeze The Cookie Dough?
Yes, these cookie dough bites are so easy to freeze! Once you do the flash feeze step in the recipe, just place the cookie dough balls into a plastic freezer bag. The cookie dough can be frozen for up to two months.
Can I Bake Cookies With This Edible Cookie Dough?
No, you can’t because this cookie dough does not have all of the ingredients (like eggs, baking powder, and baking soda) you need for baking traditional cookies. I do have an amazing Gluten-Free Chocolate Chip Cookie recipe! Not only is my cookie recipe gluten-free, but it also has a dairy-free and vegan option too.
Can I Add The Cookie Doug To Ice Cream?
This cookie dough can be easily added to your favorite ice cream. I would just make teaspoon-sized balls instead of the cookie scoop sized balls.
Gluten-Free Flour
For this recipe, I used Pillsbury gluten-free flour. It is acup for cup all-purpose gluten-free rice flour. A cup for cup gluten-free rice flour blend is one that is made up of rice flour, starches, and xanthan gum.
I recommend spooning and leveling your flour rather than scooping it out of the bag. Scooping the flour out of the bag can affect the amount of flour you get. If you use too much flour your dough may be thick or dry.
I have not tried this recipe with almond or coconut flour.
Dairy-Free and Vegan Edible Cookie Dough
There are several of us in my family that are also dairy-free, so I always try and include a dairy-free option to my gluten-free recipes. I used Smart Balance and Enjoy Life Mini Chocolate Chips for the dairy-free version of this recipe. So now you can also enjoy gluten-free and dairy-free cookie dough.
You can easily adapt this recipe to be gluten-free and vegan by using your favorite vegan butter and vegan chocolate chips, like Earth Balance Butter and Enjoy Life Chocolate Chips. There is no egg in this cookie dough recipe.

This gluten-free cookie dough is the ultimate no-bake treat! If you have been craving cookie dough, you can make this recipe in just a few minutes. You can even personalize the cookie dough by adding your favorite mix-ins like mini m&ms, sprinkles, or other types of flavored chips.
You can even eat it right away instead of making them into balls. Spoonfuls of cookie dough are just as yummy as making cookie dough bites.

- 1/2 cup unsalted butter, softened, Dairy-free use Smart Balance butter, vegan use Earth Balance.
- 1/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 tablespoon pure vanilla extract
- 1 cup gluten-free all-purpose flour, I like Pillsbury gluten-free.
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips, Dairy-free and vegan use Enjoy Life Mini Chocolate Chips
